L'Aperitif Bistro Fusion is the culmination of Chef Thomas Nouantanouvanh culinary career. Chef Thomas brought his knowledge and different techniques from around the world to create the French and Italian menu. L’Aperitif is his expression of lessons learned from different cooking techniques. L'Aperitif is a drink before a meal that complements French and Italian cuisine. Thomas uses his background as both a sommelier and a fromagerie to pair foods with drinks. "Simplicity" and "Less touch, Big flavor" are his motto.
